The Third Mumm Explorer Experience: An extraordinary meal to celebrate the world’s beauty

The first journey took them to Greenland (in July 2008) and featured a dinner orchestrated by Michelin two-star chef Sylvestre Wahid on an iceberg drifting in the middle of Sermilik Fjord. The second Mumm Explorer Experience took them to Antarctica, to the very same spot where Commander Charcot spent the winter in 1904 (Charcot Bay, October 2008) and featured a dinner by former Michelin three-star chef Gérard Boyer. G.H. Mumm and South African adventurer Mike Horn have now moved on to the next step in their extraordinary adventure around the world to celebrate the planet’s beauty. This time, G.H Mumm chose the Great Barrier Reef, and asked Mauro Colagreco (voted best chef of the year in 2009 by France’s influential Gault Millau guide) to prepare a gastronomic lunch right in the middle of the Pacific Ocean, on a pristine sandbank on the Great Barrier Reef.

Like his peers who prepared the first two meals, he used local produce for his amazing menu – which featured prawns with caviar lemon, seared ormers with sesame sauce and tomato preserve, seared baramundi on papaya and green mango with citrus fruit, and, as the finishing touch, tapioca with lait coc, corosole and longuent

The idea behind these out-of-the-ordinary meals in exceptional spots is to trigger an exchange. In this case, it is an exchange between a chef who has built an outstanding reputation on account of his inventive cuisine, a magical spot (the Great Barrier Reef) and the wealth of flavours its local produce can unleash. Magnifying these resources in their natural setting, in a nutshell, was the challenge that Mauro Colagreco had to rise to.
Preparing a gourmet meal on an iceberg or sandbank can sound awkward, but it is really only a technical challenge until the chef finds his bearings again. Here, however, he is alone with his stove and delivering what musicians would call an “unplugged” live performance. There are no special effects: just unspoilt landscapes – and the looming threat of climate change. The gastronomic challenge is to celebrate the original purity that these spots have kept untouched. The meals are bold but preparing them is simple and involves authentic techniques.

These three experiences in the uttermost parts of the earth – Greenland, Antarctica and now the Great Barrier Reef – stem from the sponsorship agreement that G.H. Mumm has signed with explorer Mike Horn. This house of champagne has been supporting these great expeditions for over a century (the black and white photo shows Commander Charcot, the first Frenchman to cross the Atlantic, celebrating his arrival on the ice floe of the white continent in 1904.

Over and above reviving its heritage, this sponsorship programme aims to promote respect for the environment and make an active contribution to protecting natural species. Staging events precisely where environmental concerns are the most acute is G.H Mumm’s way of reminding people that ecological issues rank high on its list of priorities. It is the only Maison de Champagne that has earned triple certification (Quality, Safety and Environment), rewarding its efforts over the past few years.

G.H Mumm has also partnered the GoodPlanet foundation’s Action Carbone programme to calculate the Mumm Explorer Experience’s greenhouse gas emissions and offset them by contributing to that foundation’s programmes to support sustainable development.

The main new feature in this third Mumm Explorer Experience, however, is that G.H Mumm has announced that ten lucky winners will have the exclusive opportunity to participate in the fourth Mumm Explore experience, slated for July 2010 in the Gobi desert – provided they win the contest that this Maison de Champagne will be running this September.
